COFFEE - DATE - NUT BREAD | |
1 lb. dates, finely chopped 1/2 c. walnuts, chopped 2 c. sugar 1/2 c. shortening 2 eggs, beaten 3 c. flour 2 tsp. baking powder 1/4 tsp. salt 1 3/4 c. strong hot coffee 2 tsp. baking soda 1 tsp. vanilla Chop dates and walnuts and dredge then in 1 1/2 c. of flour. Set aside. Cream shortening and sugar, add beaten eggs. Add baking powder (2 teaspoons) to the remaining 1 1/2 cups of flour in the sifter, and 1/4 teaspoon salt. Add this flour mixture to the creamed mixture. Alternate with the strong coffee in which 2 teaspoons of soda has been dissolved. Add vanilla and then stir in floured dates and nuts and the flour in them. Batter will appear to be thin. Bake in 325 degree oven for 1 hour. This makes tow bread tin loaves. |
