COOL LEMON CHEESECAKE 
1 1/2 c. graham cracker crumbs (about 20 crackers)
3 tbsp. sugar
1/4 c. butter, melted
1 pkg. (6.5 oz.) lemon fluff frosting mix
1 pkg. (8 oz.) cream cheese, softened
1 1/2 c. dairy sour cream
1 pkg. (10 oz.) frozen strawberries, thawed

Heat oven to 300 degrees. Mix thoroughly graham cracker crumbs, sugar and butter. Reserve 1/3 cup crumb mixture. Press remaining mixture evenly in bottom of square pan, 9 x 9 x 2 inches.

Prepare frosting mix as directed on package. Blend cream cheese and sour cream in large mixer bowl. Gradually beat in frosting. Pour cream cheese mixture over crumb mixture. Sprinkle with reserved crumbs. Bake 45 minutes. Cool slightly and chill. Serve with strawberries. 9 servings.

Variation: Sour cream Cheesecake: Substitute 1 package (7.2 ounces) fluffy white frosting mix for the lemon frosting mix and your favorite frozen fruit or canned pie filling for the strawberries.
