RICE AND APPLE PUDDING | |
1 qt. low-fat milk 3/4 c. regular-cooking brown or white rice, uncooked 1/3 c. sugar 1/8 tsp. salt 1 1/2 c. cored, peeled and chopped McIntosh or Golden Delicious apples 1/3 c. golden seedless raisins 1 1/2 tsp. pure vanilla extract Combine rice, milk, sugar and salt and bring to a boil. Simmer covered; stir frequently for 40 minutes. Stir in apples, raisins and vanilla. Simmer, covered, until tender and a thin layer of milk remains, about 10 to 15 minutes. Cool or refrigerate. Makes 3 3/4 cups. |
