TOMATO SOUP CONCENTRATE 
7 1/2 lbs. fresh tomatoes
6 stalks celery, cut in pieces
3 stalks fresh parsley
1/4 c. sugar
3 tsp. salt
4 tbsp. butter
4 tbsp. flour
Onion, chopped

Place tomatoes in large kettle, mash slightly. Add celery, onion, parsley, sugar, salt and pepper. Cook 1 hour. Melt butter, add flour and a little hot mixture, bring to a boil. Add to larger mixture, bring to boil, remove from heat and cool. Freeze in containers. For Soup: 2 cups concentrate, 1 cup milk and 1/2 teaspoon baking soda. Heat concentrate and add soda. Heat milk. Mix together while both are hot. Serve. Can also be used in hot dishes.
