CHICKEN SOY WITH RICE 
3 broiler-fryers, split (about 1 1/2 lbs. each)
1 med. onion, chopped fine (1/4 - 1/2 c.)
1/3 c. soy sauce
1 1/2 c. warm water

RICE:

2 c. boiling water
2 each beef bouillon cubes
1 c. uncooked long grain rice
Few drops yellow food coloring (optional)
1/2 tsp. salt

Poultry: Arrange chicken skin side down in large baking pan. Mix soy sauce, onion and water (1 1/2 cups) and pour over chicken. Bake in moderate oven 45 minutes at 350 degrees F. Turn chicken over (fasting frequently) with soy sauce mixture from pan. Bake additional 45 minutes or until golden brown and done. Serve on rice bed below.

Rice: Pour boiling water (2 cups) over bouillon cubes. Add food color if desired. Stir in rice and 1/2 teaspoon salt. Cover and bake 350 degrees F. for 1 hour or until rice is fluffy-tender and liquid absorbed. Serve hot with Soy Chicken above.

Use more water if too dry.

1 - 1 1/2 quart covered baking dish.
