1 bag curly spinach
1/2 lb. bacon, crumbled
1 bunch scallions, sliced
Croutons
4 hard boiled eggs, chopped

DRESSING (use sparingly or use Sweet and Sour Dressing) :

1/2 c. mayonnaise
1/2 c. fresh lemon juice (2 lemons)
1/2 c. salad oil
1 tbsp. tarragon vinegar
2 tsp. Dijon mustard
1/8 tsp. sugar
Salt
Lots of pepper

Shake all ingredients well and pour over salad. Serves 8.
