LIMA BEAN CHOWDER 
2 to 3 slices bacon
2 small minced onions
4 peeled and diced potatoes
2 c. cooked limas
1 tsp. salt
3 diced carrots
boiling water

White Sauce:

4 tbsp. butter
4 tbsp. flour
1/2 tsp. salt
1/4 tsp. pepper
2 c. milk

Fry bacon in large heavy pot. Remove and drain bacon. Cook onion in bacon fat until brown. Add potatoes, carrots, lima beans, salt and crumbled bacon. Cover with boiling water and cook until vegetables are tender. Make white sauce by melting butter, adding flour, salt and pepper. Slowly add milk and cook over low heat until thickened. Add to the vegetables. (Do not drain water.) Blend thoroughly.
