TURKEY LOAVES 
1 tbsp. butter
2 slices whole wheat bread, crumbled
1/4 c. chopped fresh parsley
1/8 tsp. pepper
1 lb. ground turkey, thawed
1 onion, chopped
1/3 c. plain low fat yogurt
1 egg
3/4 tsp. salt
1 tsp. horseradish
1/2 c. pitted olives, halved lengthwise

Melt butter in saucepan; add onion and saute until tender. Set aside. Preheat oven to 400 degrees. Grease two 5 1/2 by 3 inch loaf pans. In large bowl, combine cooked onions, bread crumbs, yogurt, egg, parsley, salt, pepper, and horseradish. Stir until well blended. Stir in turkey. Divide mixture in half for each pan. Sprinkle olives in pan; top with turkey mixture. Press firmly into pans. Bake for 20 minutes or until lightly browned. Serve hot or cold with lettuce, pickles, pearl onions, and baby corn, etc.
