ITALIAN RICE PIE 
1 lb. rice
1 dozen eggs
1 1/2 c. sugar
1 1/2 sm. bottles vanilla
1 tbsp. cinnamon
2/3 c. melted lard or oil

Precook rice. In large bowl, add all ingredients and mix well. Use a deep oven dish or pie plate. Line pan with pastry and cover with strips woven in lattice design. Cook at 350 degrees for 30-35 minutes or until silver knife is clear on insertion. You can add chopped pineapple, if desired, and top with cherries.
