APPLESAUCE BRAN MUFFINS 
1 1/2 c. 100% bran
1 1/2 c. applesauce
1 egg
1/4 c. butter, melted
1/2 c. brown sugar, packed
1 1/2 c. flour
1 tbsp. baking powder
1 tsp. cinnamon
1/2 c. raisins (optional)

APPLESAUCE GLAZE:

1/2 c. powdered sugar
1 tbsp. applesauce

Mix bran, applesauce, egg, butter and brown sugar. Let stand 5 minutes. In large bowl, blend flour, baking powder, and cinnamon. Stir in bran mixture just until blended; batter will be lumpy. Stir in raisins, if desired. Spoon batter into 12 muffin pan cups. Bake at 400 degrees for 15-18 minutes or until done. Cool slightly. Drizzle with Applesauce Glaze. Serve warm. Yield: 12 muffins.
