HUMMINGBIRD CAKE | |
3 c. all-purpose flour 2 c. sugar 1 tsp. baking soda 1 tsp. salt 1 tsp. ground cinnamon 3 eggs, beaten 1 c. vegetable oil 1 1/2 tsp. vanilla extract 1 (8 oz.) can crushed pineapple, undrained 1 c. chopped pecans 2 c. chopped bananas Cream Cheese Frosting 1/2 c. pecans Combine first 5 ingredients into large mixing bowl; add eggs and oil, stirring until dry ingredients are moistened. Do not beat. Stir in vanilla, pineapple, 1 cup pecans and bananas. Spoon batter into 3 greased and floured 9" round pans. Bake at 350 degrees for 25 to 30 minutes or until a wooden pick inserted in center comes out clean. Cook in pans 10 minutes, remove from pans and cool completely. CREAM CHEESE FROSTING: 1 (8 oz.) pkg. cream cheese, softened 1/2 c. butter, softened 1 (16 oz.) pkg. powdered sugar, sifted 1 tsp. vanilla Combine cheese and butter, beating until smooth. Add powdered sugar and vanilla; beat until light and fluffy. |
