LOTS-OF-CRUMBS COFFEE CAKE 
TOPPING:

2 1/2 c. all-purpose flour
3/4 c. granulated sugar
1 c. packed light brown sugar
3/4 c. melted butter
2 tsp. cinnamon

CAKE:

1 tsp. baking powder
1/2 tsp. baking soda
2 c. all-purpose flour
1/2 c. granulated sugar
Confectioners' sugar
Pinch salt
1/4 c. melted butter, cooled
1 egg
1 c. buttermilk or sour milk
1 tsp. vanilla

1. Combine flour and sugars in a large mixing bowl and toss lightly to combine. Pour in melted butter and stir lightly with a fork to form crumbs. To make large crumbs, squeeze together fistfuls of mixture; set aside.

2. Sift baking powder and baking soda through a tea strainer. Combine with flour, sugar and salt in medium mixing bowl and toss lightly.

3. In a small mixing bowl stir together melted butter and egg. Stir in buttermilk and vanilla. Add to dry ingredients and stir until just combined. Mixture will be thick.

4. Pat dough into a buttered 9" square baking pan and bake in a 350 degree oven for 35 to 45 minutes or until cake tests done. Cool cake on rack and sprinkle with confectioners' sugar. Makes 9 servings.

NOTE: To sour the milk, place 1 tablespoon lemon juice or distilled white vinegar into a liquid measuring cup. Fill to 1 cup mark with sweet milk and allow to sit for 10 minutes to clabber.
