8 oz. fish fillets Florentine Topping (recipe below) 2 tbsp. grated Parmesan cheese Lemon wedges Place fillets, skin side down in a non-stick pan. Spread Florentine Topping over fillets. Sprinkle with cheese and bake for 20 to 25 minutes at 325 degrees. Serve with lemon wedges. Makes 2 servings - 300 calories each. FLORENTINE TOPPING: 1 (10 oz.) pkg. frozen creamed spinach 2 tbsp. dry bread crumbs 1/4 tsp. nutmeg Dash pepper Cook spinach according to directions on package. Combine all ingredients. |
