COCONUT - MACADAMIA COOKIES 
1 c. butter, softened
1 c. packed brown sugar
1/2 c. granulated sugar
1 egg
2 1/4 c. all-purpose flour
1 tsp. baking soda
1 c. flaked coconut
1 jar (3 1/2 oz.) macadamia nuts, coarsely chopped

Heat oven to 375 degrees. Mix butter, sugars and egg. Stir in flour and baking soda (dough will be stiff). Stir in coconut and nuts. Drop dough by heaping teaspoonfuls about 2 inches apart onto ungreased cookie sheet. Bake until light brown, 8 to 10 minutes. (Centers will be soft.) Cool slightly, remove from cookie sheet. About 4 1/2 dozen cookies.
