PUMPKIN BUNDT CAKE | |
1 c. cooking oil 3 eggs 2 c. canned pumpkin 2 c. sugar (or fructose) 1/4 c. honey 2 3/4 c. unbleached flour 2 tsp. baking powder 1/2 tsp. baking soda 1 tsp. cinnamon 1 tsp. allspice 1/2 tsp. ginger 1/2 tsp. cloves 1 c. raisins 1 c. nuts, chopped Beat oil, eggs, pumpkin, fructose (or sugar) and honey until well mixed. Add dry ingredients and beat on medium speed for 1 minute. Stir in raisins and nuts; turn into greased and floured bundt pan. Bake 1 hour at 350 degrees; cool 15 minutes and invert. Preparation time: 1 1/4 hours. Yield: 1 tube cake. |
