THREE LAYER CARROT CAKE 
4 eggs, beaten well
2 tsp. baking soda
2 c. sugar
3 c. grated carrots
3 tsp. cinnamon
1 tsp. salt
1 1/2 c. salad oil
2 c. sifted all-purpose flour

Sift together flour, cinnamon, baking soda, salt, sugar in large bowl of your electric mixer. Add oil and eggs and mix well then blend in the carrots. Pour the mixture into three greased 8" pans and bake at 350 degrees for 30 to 35 minutes or until done.

To grease the pans use the following special mixture. 1/4 cup flour mixed well with 1/2 cup of hydrogenated shortening.

CREAM CHEESE FROSTING:

1/4 c. butter
2 tsp. vanilla
1 lb. sifted confectioners' sugar
8 oz. cream cheese
1 c. chopped pecans
