HONEYED LEMON CHICKEN 
6 skinless, boneless chicken breasts
1/2 c. honey
1/2 c. stone ground mustard with horseradish
2 tsp. fresh grated lemon peel
4-5 tbsp. lemon juice
1 1/2 tsp. cinnamon (may use curry powder instead of cinnamon)
1 lemon, thinly sliced

Place chicken in shallow baking dish, close together. Thoroughly combine all ingredients except lemon slices. Pour evenly over chicken. Bake, uncovered at 375 degrees for 30 minutes. Baste periodically with drippings. Place lemon slices on each piece; baste again. Continue baking another 30 minutes or until done. Remove chicken. Cook drippings until thick. Serve with rice or pasta.
