SWEET COCONUT BREAD 
3/4 c. flour
1 tbsp. baking powder
1/2 tsp. salt
1 c. sugar
1 c. flaked coconut
1 egg, beaten
1 c. milk
1 tsp. vanilla

Mix flour, baking powder, salt and sugar well. Combine liquid and stir into dry ingredients. Mix and press into 2 well greased 1 pound coffee tins or molds or bread pans. Let stand 20 minutes. Bake at 350 degrees for about 45 minutes. Check for doneness by inserting toothpick in center. Good served with butter, cheese mix or preserves.
