RHUBARB CAKE 
Yellow cake mix (store bought)
2-3 c. rhubarb, chopped
1 1/2 c. white sugar
1/2 pt. whipping cream (liquid)
Whipped cream or whipped topping (optional)

Mix yellow cake mix according to package instructions and spread in bottom of greased and floured 9x13 inch cake pan.

Mix rhubarb (raw or blanched) with sugar and layer over cake mix.

Dribble 1/2 pint of whipping cream over top. Bake at 350 degrees for 50-60 minutes. Serve with whipping cream.
