CHOCOLATE CHIP PISTACHIO COOKIES
3 1/4 c. flour
2 tsp. baking powder
1 tsp. salt
1 c. (2 sticks) butter, softened
1 c. sugar
2 eggs
2 tbsp. milk
1 tsp. vanilla
1/4 c. chopped walnuts
1 (3 3/4 oz.) pkg. pistachio pudding and pie filling
1 (6 oz.) pkg. semi-sweet chocolate chips

Preheat oven to 375 degrees. Lightly grease cookie sheets. Sift flour, baking powder, and salt onto wax paper. Beat butter and sugar in bowl until blended. Add eggs, milk, and vanilla; blend until creamy. Add flour mixture. Mix until stiff dough forms. Remove 1/4 of dough to a small bowl. Add the nuts to it. Add pudding mix and chocolate chips to the remaining dough, reserving 1/4 of the chocolate chip pieces. Shape rounded teaspoonfuls of pistachio dough into balls. Place 1 1/2 inches apart on sheets. Cover bottom of drinking glass with a damp cloth and flatten dough. Shape nut-dough mixture into marble size pieces and place on top of flattened pistachio cookies. Decorate each one by pushing 1 chocolate chip into middle of each "marble".

Bake for 8 to 10 minutes at 375 degrees or until cookies are lightly browned around edges. Dust with confectioners' sugar, if desired.
