VEGETABLE SOUP | |
2 tbsp. butter 1 sm. onion, chopped 1 stalk celery & leaves, diced 2 (14 1/2 oz.) cans beef broth 3 med. potatoes, peeled & diced 2 carrots, peeled & diced 1 (16 oz.) can tomatoes, broken up 1 (10 oz.) pkg. frozen mixed vegetable s 1 (10 oz.) pkg. frozen cauliflower 1 tsp. salt 1/4 tsp. pepper 1/2 tsp. basil (pinch) (opt.) 1 tsp. sugar 1. Saute onion and celery in melted butter in a large saucepan. 2. Add beef broth, potatoes, carrots, and tomatoes; cover and simmer 30 minutes. 3. Add mixed vegetables; continue cooking another 5 to 10 minutes, or until vegetables are tender. 4. Season to taste with salt, pepper, basil and sugar. Add more liquid, if desired. Makes about 6 cups. |
