CZECH APPLE STRUDEL
3 c. flour
1/3 c. sugar
1/2 tsp. salt
1 tbsp. vegetable shortening
2 eggs, separated
1 1/4 c. warm water

FILLING:

1 c. bread crumbs or crumbled vanilla wafers or corn flakes
4 apples, thinly sliced
1/2 c. white sugar
1/2 c. brown sugar
1/2 c. chopped nuts
1/2 c. raisins or coconut (or some of both)
Butter
Cinnamon

Mix flour, salt and sugar. Work in the shortening. Add egg yolks and water; mix well. Turn onto floured board and knead for about 10 minutes. Divide into 2 portions.

Cover with cloth and set aside for 1 1/2 to 2 hours or longer. On floured board, roll each portion out thinly. Place apple slices evenly over dough. Mix remaining filling ingredients. Spread half on each portion. Dot with butter. Roll as for jelly roll, from narrow end, being careful not to tear dough. Place on baking sheet and brush with beaten egg whites. Bake at 350 degrees for 30 to 35 minutes or until lightly browned.
