SOUR CHERRY FRITTERS 
1 c. flour, sifted
1 tsp. baking powder
1/2 tsp. salt
2 tbsp. sugar
2 eggs, separated
3 tbsp. water
1 c. pitted sour cherries

Sift together flour, baking powder, salt and sugar. Combine with beaten egg yolks and water. Mix until smooth. Fold in stiffly beaten egg whites. Add cherries

Drop by spoonfuls into hot fat (360°F). Cook 2-5 minutes, or until browned.

Drain on absorbent paper and serve with confectioners' sugar or fruit sauce.

Cooks Note: Other fruits or berries may be used.
