EGGPLANT PARMIGIANA 
1 eggplant
2 eggs, beaten
and matzo meal, panko or bread crumbs for breading
homemade or store bought tomato sauce (about 1 pint+
Olive oil to thinly coat bottom and sides of baking dish
Sliced mozzarella
Grated Parmigiana

Thinly slice the eggplant, storing slices in a deep bowl of ice water until ready to bread. I slice it on a diagonal for this recipe, straight for simple dipping.

Double bread and deep fry in 1/2 inch of oil on medium heat and drain.

Layer prepared glass baking dish/pan with tomato sauce, breaded and fried eggplant, sliced mozzarella and grated parmigiana.

Bake at 375°F until the top is browned (or at least melted).

In a hurry? Preparing for one or two? Put some breaded, fried eggplant on an ovenproof dish with a little sauce and cheese. Put it in a preheated toaster oven or oven to melt.
