VEGGIES IN CRISPY CRUSTS 
1/2 c. dry mashed potato mix
1/4 c. Parmesan cheese
2 tbsp. melted butter
1/2 tsp. garlic powder
1 beaten egg
1/4 tsp. dried basil
2 c. vegetables (mushrooms, carrots, broccoli, cauliflower in 1/4 inch slices)
