SARDINE AND LEMON PATE 
1 stick butter
8 oz. can sardines
4 oz. cream cheese
1/2 tsp. French mustard
Juice of 1/2 lemon
Salt
Freshly ground black pepper
1 egg white (optional)
6 black olives, pitted

Beat butter until soft and creamy. Add sardines with their oil and beat. Add cream cheese, mustard, lemon, salt and plenty of pepper. Mix well. (Alternately all above ingredients can be beaten together in an electric machine.)

Whisk egg white stiffly and fold into the mixture. Pile into dish. Garnish with black olives. Chill. Serve with hot toast.
