CORNMEAL ESCALLOPED CORN 
1 egg
1 c. sour cream
1/2 c. melted butter
1 tsp. Crisco
1 box Jiffy corn muffin mix
1 can whole kernel corn (undrained)
1 can cream corn

Mix together and pour into 9x13 pan (smaller is better -- like 9x9). Bake at 350 degrees for 45-60 minutes, or until set.
