SPANAKOPITAS 
1/2 tiropita filling recipe
2 pkg. frozen spinach, thawed & drained
1/2 c. chopped onion
1/4 c. chopped parsley
Salt, pepper & nutmeg to taste

Saute onion in butter. Add spinach and cook a few minutes until mixture is reduced. Add parsley and seasonings. Stir in cheese; set aside for 1/2 hour. Prepare as for Tiropitas. Oil can be used instead of butter.
