VEGETABLE SANDWICH FILLING 
8 oz. cream cheese
1/4 c. chopped green pepper
1/4 c. chopped celery
1/4 c. grated cucumber
1/4 c. grated carrots
1/2 med. onion, grated
1 tbsp. mayonnaise
Little lemon juice

Mix all vegetables together and squeeze juice out. Add 1 tablespoons mayonnaise and a little lemon juice with cream cheese and mix well. 12 sandwiches.
