POTATO-CHEESE SOUP 
4 c. diced raw potatoes

Cook in water to cover until tender. Saute 1 1/2 cups chopped onion in 1/4 cup butter until soft. Add 3 tablespoons flour to onions; stir and cook for 2 to 3 minutes. Add 3 cups milk to onions. Stir and cook until thick and smooth. Add potatoes and water in which they were cooked. Add: 1 tsp. salt Pepper to taste

Heat until cheese melts. Don't boil again. Cut a scallion or chives into soup when ready to serve.
