WALNUT BREAD 
5 1/3 c. warm water
1/4 c. yeast
1/4 c. plus 1 tbsp. oil
1 1/3 c. honey (or pure maple syrup)
about 1/4 c. salt
1/2 c. plus 2 tbsp. dry milk
8 c. whole wheat, kamut, spelt or any combo of your choice
9 c. bread flour
2 2/3 c. chopped walnuts

Mix and knead everything but the walnuts. Just before it feels ready to let rise, knead in the walnuts. Cover and let rise in the bowl until double (about 45 to 60 minutes pending warmth and humidity). Shape into loaves (oval or round) on a sheet or roll up balls and put them in a round cake pan to make a pretty wreath of buns. Let rise until desired size (again, time depends on environment). Mix a whole egg and 1 tbsp. of water and brush tops.

Bake at 350°F for about 30 minutes or until golden brown.
