EGGPLANT FRITTERS 
1 c. flour
2 tsp. baking powder
2 tbsp. sugar
1 c. cooked eggplant
1/4 tsp. salt
1/3 c. milk
1 egg

Sift dry ingredients. Add well beaten egg and the milk slowly, stirring constantly. Add cooked mashed eggplant. Drop by spoonfuls into deep fat. Cook until golden brown.
