ZUCCHINI STUFFED WITH COUSCOUS AND CHEESE | |
1 lg. zucchini (8 - 9 inches long) 3/4 c. chicken stock or water 1/2 c. uncooked couscous 1/2 c. cottage cheese 1/4 - 1/3 c. chopped onions 1 clove garlic 1 tbsp. parmesan cheese 1 tbsp. plain yogurt 8 oz. tomato sauce 1/2 c. chicken stock 1/2 tsp. oregano Parmesan cheese to sprinkle on top Variation: Put mozzarella cheese on top. Cut zucchini in half lengthwise and scoop out seeds. Bring 3/4 c. chicken stock or water to a boil and add uncooked couscous...let stand 5 minutes until all fluid is absorbed. Add cottage cheese, chopped onion (chives), garlic, parmesan cheese and yogurt. Fill the zucchini halves with above mixture. Mix tomato sauce, chicken stock and oregano together and pour over the zucchini. Sprinkle Parmesan cheese or Mozzarella cheese on top. Cover loosely and microwave for 20 minutes. Let stand 5 minutes. Serves 4 (101 calories/serving). |
