SPINACH QUICHE 
2 pkg. frozen spinach, defrost and drain
3 tbsp. butter
1/8 tsp. pepper
1/4 c. minced scallions
1/2 tsp. salt
1/8 tsp. nutmeg
3 eggs
1 1/2 c. heavy cream
1 tbsp. butter
1/4 c. milk
1 c. Swiss cheese, grated

Sauté the scallions in 3 tablespoons butter. Add spinach and stir over low heat to dry excess water and condiments. Taste for enough seasoning.

In medium size bowl, beat together eggs, heavy cream, 1 tablespoon butter and milk. Add Swiss cheese, the spinach/scallion mixture and mix well. Pour into pie shell (either your own or packaged) and bake at 375°F for 1/2 to 3/4 of an hour.
