ENCHILADAS | |
1 lb. ground beef 1/2 c. onion 8 sm. flour tortillas 1 (8 oz.) can tomato sauce 1 can enchilada sauce 2 c. sour cream 1 head lettuce 2 c. Cheddar cheese 2 c. Monterey Jack Preheat oven to 375 degrees. Brown ground beef. Add diced onion and cook until transparent. Add tomato sauce and 2 cups of the cheese (1 cup Cheddar/1 cup Jack). Mix together until cheese melts. Spoon into flour tortillas. Place filled tortillas in pre-greased pan and place in oven for 20 minutes. Serve on bed of shredded lettuce with scoop of sour cream. Serves 4. |
