CANDIED APPLES OR PEARS 
6 c. granulated sugar
3 c. water
3/4 tsp. cream of tartar
Red food coloring

Cook the first 3 ingredients quickly without stirring to 290 degrees. Add food color. Place pan in water to keep from hardening. Dip skewered fruit at once and cool on greased surface. Yield 9 medium apples or pears.
