NAVY BEAN SOUP 
1 c. dried navy beans
1/2 tsp. salt
1/8 tsp. pepper
1/4 tsp. dry mustard
1 onion, sliced
3 tbsp. butter
3 tbsp. flour
Juice of 1/2 lemon

Place the beans in a kettle and cover with water. Soak for 8 hours, then drain. Add 5 cups water, and seasonings. Brown the onion in butter in a saucepan. Add the flour and stir until smooth. Add to beans and simmer for 3 hours or until beans are tender. Remove from heat and press through a sieve. Add the lemon juice and serve.
