1 c. Bisquick
1/2 c. finely chopped onion
1/2 c. grated cheddar cheese
2 tbsp. parsley
1/2 tsp. salt
1/2 tsp. oregano
Dash pepper
1/8 tsp. garlic powder

1/2 c. vegetable oil
4 eggs, slightly beaten
3 c. unpeeled thinly sliced zucchini

Combine first eight ingredients. Add oil and mix. Add eggs and mix well. Fold in zucchini. Bake in greased 9 x 13-inch pan in 375 degree oven, 20-25 minutes until golden brown. Serve hot or cold. Will freeze well.

Can be baked in large pie plate and served warm with salad.
