SECOND DAY BEEF STEW 
3 c. cubed cooked beef
2 c. carrot slices
4 or 5 potatoes, peeled and quartered
2 c. water
1 c. tomato juice
1 medium onion, quartered
1 tsp. salt
1 pkg. (1 1/2 oz.) beef stew seasoning mix
2 beef bouillon cubes or 2 tsp. instant bouillon

In a large saucepan, combine all ingredients. Bring to a boil. Reduce heat, simmer covered for 35 to 40 minutes until vegetables are tender. Serves 5 or 6.

(For a flavor variation, substitute 1/2 cup red wine and 1 1/2 cups water for 2 cups water.)
