CANADIAN CHEESE SOUP 
1/2 c. green pepper, finely chopped
1/2 c. shredded carrot
1/2 c. thinly sliced green onions
1/2 c. finely chopped celery
2 tbsp. butter
1 tsp. paprika
1/4 c. flour
1 1/2 c. chicken broth
2 c. whole milk
1 1/2 c. American cheese
1/8 tsp. hot sauce
1/8 tsp. white pepper

Saute green pepper, carrot, onions, celery in butter in large saucepan. Add paprika and flour. Cook 5 minutes, stirring constantly. Add broth and milk. Cook over low heat. Add cheese, hot sauce, and pepper. Simmer, stirring occasionally until cheese melts and soup thickens.
