CHICKEN POTATO CASSEROLE | |
4 c. thinly sliced, peeled potatoes 4-5 med. onions, sliced Salt and pepper Ground thyme 1/2 c. hot water 1 (13 oz.) can evaporated milk 2 slices bacon 2 tbsp. butter 2 broiler/fryers, about 3 lbs. each, cut up Put potatoes and onions in large roasting pan and sprinkle with seasonings. Add hot water. Reserve 1/4 cup milk and pour remaining milk over vegetables. Put in hot oven (400 degrees) while preparing chicken. In large skillet, cook bacon until brown. Remove and drain. Add butter to skillet, then chicken and brown on all sides, removing pieces as they brown. Put chicken in pan with potatoes and sprinkle lightly with salt, pepper and thyme. Crumble bacon and sprinkle over top. Cover tightly with foil and bake at 400 degrees for 1 hour. Uncover. Pour reserved milk over top and sprinkle with paprika. Bake 30 minutes longer. |
