CANNED SALSA 
2 ice cream pails of tomatoes, peeled
3 lb. onions
10 green peppers
4-5 hot peppers or more
1 bunch celery
Pickling spices

Chop in food processor. Cook down until desired thickness. Add 1 teaspoon pickling spices per quart. Fill jars and seal. Yields 9-10 pints.

Hi Mary,

It's just referring to a store bought mixture which is usually consists of spices such as mustard seed, whole cloves, celery seed, bay leaves, whole black peppercorns, sometimes small dry hot peppers (whole), etc. You can buy it pre-mixed or make up your own.
