WHITE FRUIT CAKE 
1 lb. white raisins
1/2 lb. candied citron, chopped
1 lb. candied pineapple, chopped
1 lb. candied cherries, chopped (use red & green for color)
2 oz. orange peel, chopped
2 oz. lemon peel, chopped
1 lb. nut meats, chopped (walnuts & pecans)

All of above ingredients rolled in 1 cup of all-purpose flour until all flour is used.

BATTER:

1 cup of white sugar and 1 cup of butter (cream well). Add 5 eggs, one at a time and beat well after each egg. Sift together 2 cups of all-purpose flour, 1/4 teaspoon salt and 2 teaspoons baking powder. Add to egg mixture. Add 1/4 cup orange juice and 1 1/2 teaspoons vanilla. Mix well and combine with fruit mixture until all fruit is coated.

Makes 4 loaves of 2 pounds each or 1 large tube cake. Bake in pans lined with tin foil at 300 degrees for about 1 hour and 15 minutes for small cakes or 1 1/2 to 2 hours for the large cake.
