CHEDDAR CHEESE POTATOES 
6 potatoes, peeled and cubed
3 tbsp. butter
1/2 tsp. salt
1/2 tsp. paprika
2 eggs, well beaten
1/4 c. grated Cheddar cheese
1/2 c. buttered bread crumbs

Preheat oven to 350 degrees. Cook potatoes in lightly salted water. Drain potatoes and dice. Add butter, seasonings, and eggs to hot diced potatoes. Beat until light. Pile into greased baking dish. Sprinkle with grated cheese and buttered crumbs. Bake for about 15 minutes or until crumbs are brown. Serves 4 to 6.
