CHICKEN-BROCCOLI CASSEROLE | |
3 c. cooked broccoli cuts 12 oz. chicken (cooked, cut into chunks) 1/2 tsp. lemon juice 6 tbsp. lite mayonnaise 2 chicken bouillon cubes 2 c. skim milk (or 1/2%) 2 1/2 tbsp. flour 1/2 tsp. curry powder 6 oz. grated low-fat cheddar cheese 2 slices bread (crumbled) 1 tbsp. butter Layer broccoli in a 13 x 9-inch baking dish. Layer chicken on top of broccoli. Mix lemon juice, mayonnaise, bouillon cubes, skim milk, flour and curry powder in a saucepan. Cook over medium-high heat until it thickens. Pour this sauce over the broccoli and chicken. Next, add a layer of cheese. Melt the butter and pour it over the bread crumbs. Put this on top as the last layer. Bake at 350°F for 30 minutes. Yield: Serves 6. |
