BEAR STROGANOFF 
1 lb. cubed bear meat
1 can cream of mushroom soup
1 pkg. brown gravy mix
1 pkg. French onion
Rice

Cook bear meat until well done; drain excess fat in frying pan. Mix all ingredients with bear meat and bring to a boil, simmer for 30 minutes. Serve over rice or noodles.

If by joke you mean its a joke to have a recipe on a cooking website with 4 ingredients, of which 3 are packaged mixes, I'm with you. If you mean joke as in "eating bear must be a joke, right?" then no. Lots of people eat bear meat. As long as it's cooked to 145 degrees internal temperature or higher long enough to kill any potential parasites, its fine (depending where you are in the world the same applies to pork).

Bear tastes differently depending on what it's been eating, but it can be very good.
