RED RICE WITH CHICKEN OR BEEF 
1 c. uncooked rice
1 c. red wine
1 c. tangy V-8 juice
1 c. water
Cooked bits of chicken or desired strips of beef
1/4 c. chopped red peppers (optional)
1 sm. pinch red pepper
Salt to taste as desired

Bring water to furious boil. Add wine and V-8 juice. When liquid boils add rice, stirring constantly until liquid has disappeared.

Precook bits of chicken or strips of beef. Add to rice when liquid has almost completely disappeared. (If rice is still uncooked add small amounts of chicken broth until rice is cooked.) Serve hot.
