BAKED SCALLOPS 
12 oz. fresh scallops
Salt and pepper to taste
2 tbsp. sherry wine
1 cube butter, melted
1 c. dry bread crumbs

Butter a casserole and arrange scallops evenly. (If scallops are large, cut in half.) Season with salt and pepper and sprinkle with the sherry wine. Pour half of the melted batter over the scallops. Cover with the bread crumbs. Pour remaining melted butter over the crumbs. Bake at 375 degrees for 15-20 minutes. Serves 2.

Great taste. Pretty easy. I used crumbled Ritz crackers instead of bread crumbs, added another tbsp of sherry, along with a squeeze of lemon over the scallops. When I plated the scallops, I put enough crumbled Ritz crackers in the casserole dish to soak up the butter/sherry/lemon, and put that mixture on the plated scallops. Very good flavor. Don't over cook the scallops. 10 minutes worked for me.
