CHICKEN AND BROWN RICE SALAD 
3 c. cooked brown rice (1 c. uncooked)
2 c. cooked diced chicken
1/2 c. chopped celery
1/4 c. chopped ripe olives
1 sm. jar mushroom buttons
2 tbsp. green onion
2 tbsp. pimento

Mix 1/2 cup mayonnaise and 1/4 cup Italian dressing. Combine, serve on lettuce, sprinkle with cashews.
