MOCK PECAN PIE 
2 c. brown sugar
1/2 c. melted butter
1 tbsp. vanilla
4 eggs, beaten
1 c. cooked, mashed pinto beans

Beat together sugar, butter, vanilla and eggs. Stir in the beans. Pour into 9-inch unbaked pie shell. Bake at 350 degrees for 45-50 minutes or until tester comes clean in center of pie. Serve warm with whipped cream.
